MS Fabric for fast prototyping

My company plans to build a SaaS to analyze invoice data. My job is to write the user stories, so I'm not the technical guy and my question might be stupid.
Would it make sense to build the prototype of the software in Microsoft Fabric? My company already uses Fabric, it's made for data analytics, has a ton of connectors and brings a lot of the features needed out of the box.
The big question for me is, if we could safe a lot of time for the prototype, if we use Fabric.
